Meloncello Ice Cubes

Summer is here and each day we celebrate the fleeting season a bit differently. This week we are embracing the heat with what I like to call Meloncello Ice Cubes ~ sweet, thirst-quenching watermelon pairs with light and intense limoncello for a flavorful twist on the traditional hydrogen-and-oxygen variation.

Pop a cube or two in a tall glass and fill with your beverage of choice. Whether it’s with a simple lemonade or you want to make it boozy with soda, more limoncello, gin, and tonic, the choice is yours. Keep these cubes cool and readily-available for hot and lazy summer days ahead.

Make the watermelon juice – Place the watermelon pieces in a high speed blender and purée until smooth. Strain through a fine mesh strainer. Measure out 1 cup.

Make the Meloncello ice cubes – Mix the watermelon juice and limoncello together and pour into square silicone ice cube trays. I like these ice cube trays https://amzn.to/3ybrDLv
