Indian food is one of my favorite world cuisines and a mango lassi is a cool accompaniment for a spicy curry. You will find the best mangoes in Indian markets.
I buy mangoes in quantity, when they are the sweetest and freshest, peel, remove the pit, chop and freeze the pulp. This lassi is sweet enough for my tastebuds. Feel free to add a bit of agave nectar if you prefer the lassi a bit sweeter.
Place all of the ingredients in a high speed blender and blend on high speed for 1½ – 2 minutes. Pour into two medium glasses and serve.
- 1 cup frozen mango chunks
- 1 cup non-dairy yogurt½ cup non dairy milk
- 2 tbsp chopped dried mango
- 5 ice cubes
- ¼ tsp ground cardamom
- a pinch of salt
