Purple Dandelion Pesto

You can bookmark this, pesto is one of the simplest condiments around. Commonly made from basil, pesto can be made from almost anything! Walnuts, arugula, red peppers to name a few. We are using dandelion greens. Dandelion belongs to the daisy family and is a common sign that Spring is coming. Dandelion greens are high in fiber and Vitamins K, A and C. Dandelion greens are nutty and earthy with just a hint of pepper. Serve this pesto with just cooked ramen, or as a dip with crusty bread.

Purple Dandelion Pesto

Make the pesto – In a food processor, add the ginger, garlic, Gochujang pepper, tahini and agave nectar. Pulse until the garlic and ginger are finely chopped. Add the dandelion greens and season with salt and pepper to taste. Process until finely chopped. Stream in the grapeseed oil until smooth. Taste and adjust salt and pepper, if desired.

PESTO

  • 1½ tbsp minced fresh ginger
  • 1 large garlic clove
  • ¼ tsp Gochujang red chiles
  • 2 tbsp tahini
  • 1 tbsp agave nectar
  • 1 bunch purple dandelion greens, washed, thickest stems discarded, coarsely chopped
  • salt and pepper to taste
  • ⅓ cup grape seed oil
