One of my favorite fruit, pineapple is the star in this simple sorbet recipe. The recipe couldn't be easier. The high-speed blender does practically all of the work! I reduced the amount of sugar to my taste. I wouldn't go any lower than half a cup, but if you have a sweet tooth, feel free to increase the amount of sugar to 1 cup. The sorbet will be harder the less sugar that you use. To compensate for that issue, add one to two tablespoons of vodka.
Make the sorbet – In a high speed blender, add all of the ingredients and blend for 1-2 minutes until smooth. Chill overnight.
Freeze according to you ice cream maker instructions.

- 1 medium pineapple, peeled and cut into chunks
- 1 lemon, juiced
- 1 orange, juiced
- ⅔ cup sugar
- 2 tbsp vodka
- a pinch of salt
