Cranberry Dill Dip

While not everyone is a fan of grandma’s Thanksgiving cranberry sauce, C stands for Coocoo this week. Coocoo for Cranberries, that is. Not to over-dramatize the almighty cranberry, but Alice Hoffman once wrote in her book, The Blackbird House, “the first cranberries came to earth in the beak of a dove, then heaven was red and the memory of paradise could be plucked from shrubs in sandy bogs and marshes.” Are you on the edge of your seat yet?

From mid-September through the holidays, cranberries are at their peak flavor. This tart fruit can be found in recipes ranging from sweet to savory. Unlike most of its fruity friends, cranberries are uniquely festive. We all need easy recipes at the holidays that can be thrown together quickly. Only three ingredients for this one — an instant classic! One rule, though. Use FRESH dill, not dried dill and you’ll thank me later. Be sure to make this dip the night before so that the flavors soak one another in.

Cranberry Dill Dip

Mix the vegan cream cheese, cranberries and chopped dill together in a small bowl. Chill overnight. Serve with crackers or flatbread.

makes 1 cup

CRANBERRY DIP

  • 8 oz Trader Joes Vegan plain Cream Cheese
  • ¼ cup dried cranberries, chopped
  • 2 tbsp chopped fresh dill
