Beet Apple Relish

Thanksgiving is almost here! I’m not cooking an entire feast this year. We are going to visit friends and I’ve been asked to make rajas, which are roasted poblano chile strips. This relish is for your friends who don’t like cranberry sauce and couldn’t be more simple to make. Three ingredients and no cooking! It’s a fantastic addition to your Thanksgiving table. Earthy and sweet with a hint of orange, simply delicious.

Beet Apple Relish

Place the chopped peeled beet, chopped peeled apple, orange zest and salt in a food processor. Pulse until finely chopped, about 1 minute. Spoon into a serving dish.

makes 1½ cups

RELISH

  • 1 medium beet, peeled and coarsely chopped
  • 1 large Honeycrisp apple, peeled and coarsely chopped
  • zest from 1 orange
  • a pinch of salt
